it all depends on the lip around the pan. some cookie sheets just have a slightly raised end and some have a 1/2 inch lip all the way around.

She should use the pan with the lip all the way around so the batter doesn’t cook off the edges.

However she could line the non-lip cookie sheet with aluminum foil and make a 1 inch deep lip all around the pumpkin roll.

She can use either the big difference is cost and most of the pans have deeper edges.

As long as it has sides all around, it's good for a jelly roll. Some cookie sheets don't have sides all around.

Yup..a jelly roll pan has slightly higher edges, but you can use the two interchangeable, as long as it's a cookie sheet with a raised edge, and not one of the flat ones.

Cookie sheets have no sides/lips. A jelly roll pan has 1/2 to 3/4 inch sides all the way around.

It is the same thing…IF your cookie sheets have sides. Actual cookie sheets don’t have sides on them…the jelly roll pan …aka cookie sheet… has sides so the batter stays in. Tell you Mom she can use the cookie sheet….

Not really a difference, unless the sides may be higher on a jelly roll pan. I have used a cookie sheet for these jelly roll desserts. She sure can use a cookie sheet! Use parchment paper as a lining, if you have any. Other wise a good grease and flour method.

A jelly roll pan has a bit of a side (like a very short cake pan) a cookie sheet typically has just one side to grab to pull it out of the oven. Some people call a jelly roll pan a cookie sheet because you can make cookies on it. I think if you tried to use a true cookie sheet (the one with only one side) you might have a problem keeping everything together.
