Fold over the bottom, and tuck in the corners.

Lay your filling just off-centre, and for 2/3rds of the way down the wrap. bring side over to just cover filling, hold in place while you fold up bottom then roll. Bottom and left hand side should now be 'L' shaped, fold over and over or rollwrap in napkin kitchen paper to keep it there!
References :
years of practice

Place the ingredients in a line down the middle of the tortilla, leaving about an inch around the edges to wrap. Fold the sides in, tuck the bottom up and - if you want them portable- the top down. To make it portable, wrap it in foil. Peel it down, like a candy bar, as you eat.
The secret is not to use to much filling or it wont work.

Here she shows you another way ( at about 5.30) but she uses too much filling. You can use this method if you put them in a dish, cover with sauce and put back in the oven.

Put it in the microwave for 30 seconds.
Take the opposite ends, and fold them in towards the middle.
With your thumbs, grab the bottom flap and fold that up to the middle.
Roll it a tiny bit, and tuck in the corners at the top.
References :
I worked in a sub shop for 3 years.

Always put them in the oven for a few minutes first. It makes it easier.
